Recipe Redux

Every now and again I have a strange, random thought. This morning’s thought was Recipe Redoux. So I Googled it and found a site “focused on taking delicious dishes, keeping them delicious, but making them better for you”. It’s actually a fun website, comprised of 100+ healthy food bloggers that compete by REDOing traditional recipes each month for a given theme. 

I LOVE spicy foods and one of the site’s latest feats was India Samosa Patties… looks so yummy! Check out the recipe below.

Ingredients:

6 oz. chickpeas
1 lb Russet potatoes, peeled and cut into cubes
1/8 c. Panko breadcrumbs (*optional GF)
½ c. Onion, diced
½ c. Carrots, grated
½ c. Peas
3 T. Canola oil
1 tsp. Cumin
Pinch of Sea Salt
Pinch of Turmeric
Pinch of Red pepper flakes
Pinch of Chili Powder
Pinch of Garam masala mix (*optional)

Directions:

  1. Cube potatoes.

  2. Bring potatoes to boil in a large pot of water. Simmer for 20 minutes or until soft and fork can easily poke through.

  3. Drain and return to pot. Add chickpeas, 1 T. canola oil and all the spices. Mash everything together well.

  4. In a wok or large skillet with a lid add remaining 2 T. oil , onions, carrots and peas. Saute for about ten minutes or until tender.

  5. Mix the veggie mixture with the potato mixture and add the Panko breadcrumbs.

  6. Allow the mixture to completely cool, about 30 minutes in refrigerator, before forming.

  7. Once cooled, roll into large balls then flatten and bake at 375 degrees for 20 minutes or until golden brown.
