Once a week I shop for groceries. I’ve gotten much better at estimating my needs for the week and buying just that amount. At the end of the week, I try to empty my fridge of “extras”. All those contents go into what I call The Egg Solution.
The recipe is super simple! You can use regular eggs, egg whites or both! Combine all those extras – chicken, bacon, pepperoni, ground turkey/beef, peppers, onions, zucchini, broccoli, mushrooms, spinach, cheese, basically ANYTHING – in with the eggs, season and then bake for about 45 minutes for an easy breakfast, lunch or dinner dish! You can bake the it in a regular-size casserole dish or use a muffin pan for easy-to-reheat, individual treats!
